Brussel Sprout Fritters

Ingredients:
- 500g red darling brussel sprouts
- 1 egg
- ½ cup of cheddar cheese
- 1 tbs plain flour
- 2-4 tbs vegetable oil
- Salt
Method:
- Using a knife, mandolin or a food processor, slice brussel sprouts finely. In a separate bowl whisk one egg and season with salt. Combine sprouts, flour, egg and cheese in a bowl and mix with your hands.
- Add enough vegetable oil to evenly coat the bottom of a frying pan – bring to a medium high heat. Take a small amount of the mixture and squeeze together in your hands to form a fritter. Add fritters to the pan and shallow fry for 2 minutes or until golden brown, then turn and cook for a further 2 minutes.
