Shaved Sprouts and Pecorino Salad
Serves 6-8 as a side
- 1 green apple, cut into matchsticks
- 450g brussels sprouts, shaved or grated (4 cups)
- 1 cup grated grated pecorino or parmesan
- 1 cup chopped almonds
- 6 slices cooked bacon, crumbled (optional)
- 1 lemon, juiced
- 1 orange, juiced
- 1/2 cup olive oil
- 1 clove garlic
- salt and pepper
- Wisk dressing ingredients and set aside.
- In a serving bowl, toss together the bacon, brussles sprouts, and almonds.
- Drizzle with dressing and sprinkle with grated cheese, and toss to coat.
- Chill until serving.
